Guess!

A Recipe for My Sister Rachel

Baked Peanut Chicken
Serves 4-6 people

2-3 lbs boneless, skinless chicken breast
1 can A Taste of Thai Coconut Milk
1 packet A Taste of Thai Peanut Sauce Mix
(use both inner envelope)

1- MAKE Preheat oven to 350F. Add Peanut Sauce Mix (both inner envelopes) and Coconut Milk to a baking dish. Whisk until smooth. Add chicken, dredging both sides of chicken in peanut sauce.

2- BAKE uncovered for 25-30 min. or until done. Spoon extra sauce over rice, potatoes, or pasta.

Smurf Girl




We were watching Smurfs while eating our grits, toast, and banana smoothie this morning. Shaun and I were talking how cute it would be if we had the kids dress up as Smurfs for Halloween next year. Next thing I know Isabel comes out with this outfit and said "Look, I'm a Smurf!" I helped with her hat, but the rest was all her.

We watched one of our friend's kids from the ward while she did some errands. They had a blast, but especially the boys. They ran around with the laser guns forever playing war games. I think it's fitting that while the boys were busy destroying each other, the girls were busy building pretty pink castles.

I know I said "prosperity", but I meant to say "posterity"! It's a bit humiliating. Oh well.

An Update

Shaun finally was able to get through to HRC yesterday, and its not good news. The new system is still down, and she can't process our paperwork till its up and running. She said that won't be for another couple weeks, or worst case scenario, end of February. I guess there is really no rush for us to get out of here. Shaun has the best hours possible and is happy. Izzy will be able to finish her preschool year, and maybe I'll get to see a really good friend of mine baby before we leave. It's also good that we won't have to move in the dead of winter. There's no rush, but still......it sure would be nice to know where we are going.
